No joke, this is YUMMY. A friend of mine LOVES linguini and clam and takes all day to soak the clams, shuck, bla bla. Not me. I made it for him and his wife and they said it was the best ever. Yup!! And I said thanks, all in under a half hour and using canned clams. They couldn’t believe it. It’s the truth. I guess if you wanted to “pretty” it up, you could add some steamed clams on the top. Us? We just eat as is with fresh parmesan cheese, a side salad and glass of Pinot Grigio. Paleese try this and let me know what you think.
I chop the onions, press the garlic, open the clams and juice to start. Then I start the water boiling for the pasta. While I do that, I saute the onions.Wait until they are just about clear 3 – 4 minutes then add the garlic. The garlic cooks quick, so I don’t like to add it with the onions. Saute another minute or so adding a little more olive oil if it’s dry.Once the onions and garlic are all cooked, add your lemon juice, clam broth and clams. Salt (I don’t add) to taste, pepper (I use fresh ground) and basil or oregano to taste. (I use a pinch of whatever I feel like for that day). Let that come to a boil. As soon as it does, put it on the lowest setting.
Your water should be boiling by now so put in your linguini. While all that is cooking up and simmering, you can clean whatever dishes you dirtied to save time. Once the pasta is done, drain it and add it to the clam broth. Toss it up really good and grate some fresh cheese on top (more for each person to add at an individual basis). If you want to wait another minute or so, clean up the colander and pot you cooked your pasta in. That only leaves a couple of dishes and one pan to clean afterwards. If you want to be decadent, have some crusty bread or garlic bread with it for dipping. YUM, but I try to stay away from it. Enjoy and please, Let me know what you think. - 1 cup chopped onions
- 4 – 5 cloves chopped garlic (I use a whole bulb, we love garlic, lol)
- 1//2 cup olive oil
- 4 – 6.5oz cans chopped clams
- 2 tsp. lemon juice
- 1 bottle clam broth
- salt, pepper, oregano, basil to taste
Pasta of your choice. I use quinoa spaghetti
In a large skillet, sauté onions until clear. Add garlic and cook for another minute. Add clam broth, clams, salt, pepper, oregano and/or garlic. Simmer and toss the cooked pasta in the broth. Add cheese. Serve with a nice side salad, crusty bread and your favorite beverage if you so choose.
