- ¾ cup pumpkin seeds
- ¾ cup sunflower seeds
- ¾ cup raw cacao nibs
- 3 tablespoon flax meal
- 2 tablespoons coconut oil
- 1 tablespoon raw honey, (optional)
- 10 pitted dates (to make date paste)
- ½ cup unsweetened, shredded coconut (for garnish)
Put dates in a bowl and cover with water. Let soak 1 hour. Once the dates are soft, pour them into a food processor with the water and blend until smooth, adding more water if needed.
Combine first 6 ingredients and half of your date paste in a food processor. Add more date paste or honey until the dough sticks together when you squeeze it. Form mixture into balls about the size of a golf ball. Roll each ball in the shredded coconut to coat and then refrigerate until chilled. (10 Servings)
